Green bean and celery salad
From The Bitten Word
In a medium bowl, whisk together 2 tablespoons white-wine vinegar
2 teaspoons Dijon mustard
1/2 teaspoon honey
Season with coarse salt and ground pepper
Whisk in 1/4 c. extra-virgin olive oil
Add 1 pound green beans, trimmed and cut into 1/4-inch pieces
3 celery stalks, halved lengthwise and cut into 1/4-inch pieces
Toss to combine
Season to taste with coarse salt and ground pepper
The guys at The Bitten Word said it was better the next day so I made it the night before we needed it. It was delicious this way. The green beans and celery were super crunchy yet they had time to marinate a little. The veggie loving toddler ate all her salad. One toddler was sick so he had a bite, the other toddler had a few bites though wasn't exactly impressed. A really good side dish though, we'll make it again.
