Spicy miso Carbonara

2 tbs olive oil

4 ounces bacon, chopped

2 or more tbs garlic chile paste

2 or more tbs white miso

2 tbs water

3 eggs

3/4 pound of long spaghetti, choose your shape

2 ounces shredded parmesan cheese

1 tsp black pepper

3 scallions finely chopped


Start by bringing a pot of water to a boil, then add salt

Cook the bacon in olive oil in a large pan, turn off heat and set aside

In a medium bowl, add the miso, chile paste and 2 tbs of salted water from your pasta and stir to combine

Beat in the eggs

When the pasta is done, do not drain but rather add the pasta to the pan with the bacon and over medium heat until everything is hot

Over very low heat, add the eggs mixture and toss to combine.  You want to coat all the pasta with the egg mixture but you don't want to scramble the eggs

Add the pasta and toss more until the cheese is melted

Add more pasta water if it gets too thick

Season with salt and pepper

Serve with chopped scallions and more parmesan if desired
