BBQ chicken with grilled corn and zucchini

2 cup rinsed quinoa
3 1/2 cup broth
1 lbs boneless chicken breast or thighs
salt and pepper
1/2 cup BBQ sauce
1 lbs zucchini, quartered lengthwise
2 ears of corn
1/4 cup feta cheese
3 scallions, chopped
2 tbs cilantro, chopped
more BBQ sauce to top


Bring the broth to a boil in a small saucepan
Add quinoa and cover and simmer for 15 minutes
Let steam with the lid on for 5 minutes
Fluff with a fork
Season the chicken with salt and pepper
Cook on a grill or grill pan until cooked through and lightly brown
Slice and toss with BBQ sauce
Grill the corn and zucchini until done, about 2-3 minutes per side
Cut the corn from the cob
Assemble a bowl with quinoa, chicken, corn, zucchini and top with feta, scallions and more BBQ sauce

12/2021 update-
We didn't make enough quinoa and the adults didn't have enough after the kids went through.  We grilled 3 small zucchini, 2 cups of corn and a bunch of chicken thighs.  We'll have some leftovers but will just need to make more quinoa for lunches tomorrow.
