Beef and broccoli
We use this recipe from Savory Tooth for out own Chinese take out, fake out. It uses a pressure cooker/multi cooker.
What you need-
1 tbs vegetable oil
2 lbs well marbled chuck roast, sliced
3 cloves garlic, finely chopped
1/2 cup beef broth
1/2 cup soy sauce
2 tbs brown sugar
healthy dose of Sriracha
2-3 medium broccoli crowns, cut into florets and steamed to your desired doneness, for us-3 minutes or so
a can of drained water chestnuts if you like em
1 tbs corn starch
Set your multi cooker to saute
Heat the oil and cook the beef until browned, adding the garlic for the last minute or two
Mix the soy sauce, beef broth, brown sugar and hot sauce in your measuring cup
Pour over your beef and stir again
Set your multi cooker to high pressure cook for 15 minutes
After the timer has gone off, do a quick release and remove the lid
Turn the cooker to simmer
Remove about 1/4 cup of liquid and stir in the corn starch, mix until it's smooth
Pour the cornstarch slurry into the pot and cook until thickened, remember it will thicken slightly as it cools
Add in water chestnuts and broccoli and warm through, don't overcook the broccoli!
Serve over rice or for a paleo version, don't stir in the broccoli and just serve with the broccoli on the bottom
