Vanilla almond granola

I picked up some store bought granola like this from the store a few weeks ago.  It's great on top of our home made yogurt with a tiny drizzle of agave since we make our yogurt with very little sweetener in it.  This is a good home made version.  From Sally's Baking Addiction.  Updated for us 7/2024

2 1/2 c. (200 grams) old fashioned rolled oats
3/4 c (100 grams) slivered almonds
a light sprinkle of both chia seeds and flax seeds (maybe a tsp or two)
1/2 tsp ground cinnamon
1/8 tsp salt
1/2 cup (120 grams) maple syrup
1/4 cup (60 ml ) melted coconut oil
1/4 tsp almond extract
1 tbs vanilla extract

Toss the oats, almonds, cinnamon and salt in a large bowl.
Stir together the maple syrup and coconut oil.
Add in the extracts and then pour over the oat mixture.
Bake in a parchment or silpat lined rimmed baking sheet in the middle of a 300 degree oven for 40 minutes, stirring every 15 minutes or until lightly brown (obv the last one will only be 10 minutes.  As originally written, I think it comes out a little too brown for my liking)
Cool completely and add in any dried fruit if you want.  Dried cherries would be great in this one.  We usually add craisins.
