Vietnamese -ish chicken and noodles
I had another plan in mind for dinner tonight......until I remembered that my kids don't appreciate the deliciousness of peanut sauce. Same idea, different sauce. I used another recipe from Pinch of Yum but adjusted it for our family tastes.
1 large chicken breast, poached, grilled or pan fried, cut into pieces
6 ounces rice noodles, cooked and drained well (I used wide noodles, to cook. Add boiling water and let cook until they are tender. These guys took a while, 20 minutes or more)
about 2 cups shredded cabbage
3 chopped scallions
1 large carrot, finely sliced
1/2 red bell pepper, finely sliced
chopped cilantro leaves *but leave out for my family and add on top for people who like it
For the dressing
4 cloves, garlic
2 tbs rice vinegar
2 tbs brown sugar
3 tbs fish sauce
6 tbs lime juice
6 tbs vegetable oil
1/2- 1 tsp chili garlic paste or more for heat, see original recipe if you like it spicy!
Mix the dressing in a small food processor, pulsing to combine.
If you've poached your chicken, add some of the dressing and toss the chicken in a pan over medium heat to combine flavors. Add to a bowl.
Add the noodles to the pan, adding some sauce and cook a few minutes to add flavor to them. Add to the bowl.
Add the other ingredients and toss to combine. Add dressing and serve.
