Teriyaki sauce
This recipe from Food 52 for teriyaki sauce is terrific. We usually have all the ingredients on hand and it's so so so good.
1/4 cup soy sauce
1/4 cup mirin
1/4 cup sake
2 tablespoons sugar
2 teaspoons cornstarch
2 tablespoons water

Combine the soy sauce, mirin, sake and sugar in a saucepan and bring to a boil of medium high heat
In a small bowl, combine the water and corn starch and stir
Whisk the corn starch into the sauce and reduce to medium, cooking for a few minutes until your desired consistency
Off heat, taste for seasoning and add more sugar and soy sauce if needed
2022 version
We made this one from Daring Gourmet last night and because I forgot we already had a recipe here
1/2 cup soy sauce
1/4 cup brown sugar
1 1/2 tsp freshly grated ginger
1 tsp garlic (we used garlic powder so it was nice and smooth
1 tsp sesame oil
3 tbs mirin
1/4 cup water mixed with 3 tsp cornstarch
Put everything in a small pot, whisk to combine and bring to a boil over medium heat, reduce heat and simmer for about 4 minutes
