Ham and pineapple quesadillas

From Budget Bytes.

I'm going to write this up exactly the same as the original recipe though I know Mr. PB&C made some adjustments.  I think he added a little more cheese because we had a little extra ham cut up.

8 oz softened cream cheese
1 c. shredded mozzarella
3 sliced green onions (I think we left these out actually)
1 15 oz can drained pineapple chunks cut into smaller bites for the smaller kiddos
1/2 lbs cut up ham
8 inch flour tortillas

Combine the cream cheese, shredded mozzarella and sliced green onions if you're using them in a bowl and stir until well combined
Add the pineapple and ham and gently fold together
Place 1/4 to 1/3 cup of the filling in each tortilla and spread to cover half of the surface
Fold the tortilla in half to close
Cook each quesadilla in a skillet over medium heat until brown and crispy on both sides

Toddler review-

They loved them.  We had some extra filling so we made some more for kindergartners lunches.  Empty bento boxes at the end of the day.
