Pan pizza

In  bowl add
468 g water
12g yeast
22 g sugar 
and let sit for 5 minutes while you whisk 
690 g of bread four 
6 g salt
Add the flour into the bowl of your mixer and add
179 of vegetable oil 

Mix until you get a nice stretchy dough
We all know about the windowpane test now, right?

Put into an oiled bowl, roll the dough in the oil, cover, let rise in a non drafty warm place for 90 minutes

Punch of down and cut into two balls
On a lightly floured counter form them into to balls with your seam side down
Cover again with a little oiled plastic wrap and let sit 10 or so minutes

Stretch a dough ball avoiding making any thin spots into your pizza pan that has been brushed with melted butter or oil
Add shredded provolone 
3 ounces of sauce 
Shredded mozzarella cheese
Toppings that you want

Bake at 450 degrees for 20 minutes (pretty sure we used less time)
