Sourdough bagels

These are a great wonderful size.  Not too big but big enough for a deluxe breakfast sandwich. 


150 g active sourdough 

250 g warm water

2 tbs sugar

500 g bread flour

9 g salt

Mix well and cover with a damp towel overnight and sit sit on the counter

Section off into 8 pieces and roll into a bowl

Rest 10 minutes

Poke a hole in each and stretch a little 

Rest on a parchment lined cookie sheet to rise for 30 minutes

Cook each bagel in simmering water with a little honey of malt syrup for a minute per side

Add toppings if desired (brown sugar, white sugar, and cinnamon)

Bake at 425 for 25 minutes
