Cheese spread

I think I'll only make a half batch next time.  This makes a lot of cheese spread so I shared it.

1 pound of shredded leftover cheese, anything you've got (I used raclette type cheese since that's what I had but blue, brie, goat cheese, gruyere

A couple pats of butter if you're using mostly hard cheeses

a garlic clove, or more

1/2 cup to 1 cup of white wine

1-2 tbs chives

salt and pepper to taste


Add your cheeses, garlic and butter to your food processor

Turn on and slowly stream in the white wine until you get a good consistency (next time I'll use more wine since mine was a little too thick)

Add in chives and pulse a few times to combine

Season with salt and pepper


Serve with crackers, crudite or bagette
