Tomato jam

 I had a fancy pants burger at a local place that had tomato jam on it.  Amazing condiment, a spicy and sweet version of ketchup.  I tasked my mom to find a recipe so we could make it at home.  We made a batch several years ago and we put it on our do make list when tomatoes came back into season.  If we eat homemade things, we have to put in the work in making it as well.  

We made two versions this year.  Smoky and Spicy.  The OG version is smoky, for the record. 


For each batch, finely chop 5 pounds of tomatoes, tough cores removed. 

For the smoky version 

3 1/2 cups sugar

1/2 cup bottled lime juice *

2 tsp fresh ground ginger

1 1/2 tsp smoked paprika

1 1/2 tsp chipotle powder

1/2 tsp cayenne

1 tbs salt

1 tbs red pepper flakes


For the Spicy tomato jam

3 1/2 cups sugar

1/2 cup bottled lime juice

2 tsp fresh grated ginger

1 tsp cinnamon 

1/2 tsp ground cumin 

1 tbs salt

1 tbs red pepper flakes 


Cook everything together until it's nice and thick 3-4 hours depending on the water level of your tomatoes.  You're looking for a thick sauce like consistency

Ladle into hot clean jars and process in a water bath for 20 minutes

Remove from water and let sit 5 minutes and then remove and make sure they all seal


Each batch made between 8-9 1/2 half pint jars


*many canning recipes call for lemon or lime juice from a bottle since their acidity are consistent as opposed to fruit.
