Earl Grey Truffles
These lovely truffles are super easy to make. They don't have an outer coating which saves on time but are a perfect addition to a tea party or shower party.

2/3 cup heavy cream
2 tbs unslated butter, cut into pieces and softened
2 tsp loose Earl Grey tea
6 oz fine quality bittersweet chocolate
1 cup unsweetened Dutch process coca powder
Bring cream and butter to a boil in a small saucepan
Stir in tea and let steep off heat, for 5 minutes
Finely chop the chocolate and transfer to a bowl
Strain the cream mixture into the chocolate
Whisk until smooth
Chill, covered until firm, about 2 hours
Bring to room temperature and then spoon out level teaspoons of ganache
Roll the ganache into balls using cocoa powder dusted hands
Drop them into a bowl with the cocoa powder to even cover
