Roasted chicken

There are so many versions of roasted chicken out there on the web.  We've used this simple method twice now with great success.  From Simply Recipes (a really great website for classic versions of all kind of dishes).

We use the rub on our chicken thighs.  Place a wire rack over a sheet pan and then the chicken on top of that. 

Bake for 30 minutes at 400 and then 10-30 more minutes at 350 or until the internal temperature of the chicken thighs reaches 170.  

If you remove the chicken from the bones, save the bones in the freezer until you've got enough for a batch of chicken broth.
