Apple pie baked oatmeal

Another recipe from Budget Bytes. 

Getting ready in the morning is one of the busiest times for our family so we need all the help we can get.  I've made two versions of baked oatmeal that have gone over moderately well for all our little ones.  There's a blueberry version that 2 out of 3 kiddos liked.  One girl didn't like how mushy the blueberries got and picked out every last one.  I decided to give the apple version a got this week to use up some apples that we had.  One bite in and both girls told me they disliked it.  Turns out they are not fans of cloves.  I was going to cut back on the amount of cloves next time but they really didn't like it.  Next time, no cloves.  If you like it, add 1/8 tsp of cloves to the top of the apples. 

2 medium apples, chopped
1 tbs lemon juice
2 tbs brown sugar
1 tbs corn starch
1/2 tsp cinnamon

2 eggs
1 1/2 c. applesauce
1 tsp vanilla
1 tsp salt
1 tsp baking powder
1 tsp cinnamon
1/4 c. brown sugar
1 1/2 c. milk
2 1/2 c. old fashioned oats

Layer the apples in the bottom of a greased 8x8 baking dish
Add lemon juice, 2 tbs brown sugar, corn starch and cinnamon and toss to coat
In a large bowl, whisk eggs, applesauce, vanilla, salt, baking powder, cinnamon and brown sugar
Add milk and whisk again
Add the oats and stir to combine
Pour oatmeal mixture over apples and bake at 375 for 45 minutes or until the center is set and the top is lightly golden
