Red Beans and Rice 2.0
Here's a reader submitted recipe from my friend P. She knows more about red beans and rice than I do so I'll need to try this version out too.
1 lbs dried red beans
water and chicken broth for soaking
1 medium onion, diced
1 lbs smoked sausage, cut into rounds
7 c. of liquid (chicken broth, water or even beer, whatever you want)
1 ham hock
Worchestershire sauce, Liquid Smoke, hot sauce, salt and pepper all to taste
Soak the red beans overnight.
In a large heavy bottomed pot, cook the onions and then add the sausage and cook until browned.
Transfer the sausage mixture and the drained beans to a crockpot along with the liquid, ham hock and spices.
Cook on low 8 hours.
Near the end, take out about a cup of beans and mash them with a fork and add back in.
Serve over rice.
