Dense bean salad with steak and chimichurri
Dense bean salad alert!
1 lbs skirt steak, seasoned with steak seasoning, grilled to your liking (just don't over cook it)
1 shallot, finely chopped
1/2 bunch of chopped cilantro
1/2 batch of chopped flat leaf parsley
1 roasted bell pepper, cut into small bites
1 can navy and/or chickpeas, rinsed and drained
1 container of mini mozarella balls
1/4 c red wine vinegar
1/2 c olive oil
salt and black pepper to taste
red pepper flakes to taste (I had a heavy hand and it was delicious)
Juice of one lemon
I know the ingredients are out of order but I'm going to write it up like I did it.
In a large bowl, add in the chopped shallot, parsley, cilantro, lemon juice, vinegar, red pepper,
and olive oil and mix well while you get everything else together
Chop your steak into small cubes/bites
Toss in the mozzarella, chopped steak, red pepper, and beans
Taste for seasoning and eat
