Garbage Plate

I knew about Garbage Plate from my sister, then I saw it on a YT channel that I liked (there's was both GF and vegan though) and then we finally got the courage when Binging With Babish cooked it on the show.  Yeah there are lots of parts but many can be done ahead.  We usually make these with hot dogs but they can also be topped with smashed beef patties, with or without cheese.

For the home fries
Do this first so the potatoes can fully dry before cooking them, you'll be rewarded with crispy potatoes 

4-5 large potatoes, peeled and diced into hashbrown sized cubes (we like them small)
4-5 tbs white vinegar
4-5 pinches of salt 
1 tbs vegetable oil 
1 tbs butter
1 tsp paprika, optional 
2 pinches salt 
2 pinches of ground black pepper 

Cook the potatoes in water with vinegar and salt for 6-7 minutes (5 for lower altitude)
Drain and let dry on a clean kitchen towel
Cook the potatoes with oil and butter in a large cast iron, about 4 minutes a side until all sides are brown and crispy (resist the urge to stir often and do not over crowd the pan, cook it batches if necessary)
When potatoes are done add paprika, salt, and pepper and toss to coat

Next step, so it can sit in the fridge
Macaroni salad 

Cooked and rinsed pasta, about 1/2 lbs, we like elbows 
1/2  to 1 cup finely diced carrot 
1/4 c finely diced celery 
1/4 c sliced green onions or chives 
1/4 cup diced red peppers 
garlic powder
salt 
pepper
2 large spoonfuls may 
1 large spoonful sour cream 
heaping tbs Dijon mustard 

Mix the pasta and veggies with the garlic powder, salt, and pepper and toss
Mix in mayo, sour cream, and Dijon
Taste for seasoning 

Meat sauce
1 c diced onion 
1 lbs ground beef
4 oz tomato paste 
1/4 tsp of each of these spices - cinnamon, ground allspice, cumin, sweet paprika, garlic powder, and less of cayenne 
2 pinches salt and pepper

In a large pan cook your onions in a little vegetable oil over medium heat until soft
Remove from pan and set aside 
Add your meat to the pan and spread flat, cook for 5 minutes over medium heat or until that side is brown and started to crisp up
Break up the remaining meat and cook until everything is cooked through, scraping the bottom of the pan 
Add the tomato paste and stir to combine 
Add your spices and stir again 
Add your onions back in and stir
Deglaze with 1/2 - 1 cup of water and stir again 
Season with salt and pepper

To serve 
Split the bottom of your plate with macaroni salad and potatoes 
Top with grilled split hot dogs or smashed burgers
Top with meat sauce 
Ketchup and yellow mustard if you want



*the original recipe calls for ground cloves but I know my family is not a fan, so I leave it out
