Mascarpone cream

 My mom has been making this for years when we get together for family brunch.  We serve it on top of berries.  Sometimes with a big ole spoonful when people aren't looking.


From Marcellina in Cuchina


1 cup heavy whipping cream 

1/4 cup icing sugar

1 cup mascarpone 

2 tsp vanilla extract


Whisk the cream and icing sugar in a bowl until soft peaks form

In a small bowl, gently mix the mascarpone and vanilla until smooth

Carefully mix the mascarpone mixture into the cream mixture being careful not to over mix
