Diner style buttermilk pancakes

We used purchased buttermilk for the first time we tried this recipe.  I'll update again after we try a homemade version.
Note-This recipe is best for pancakes.  Also try and get the buttermilk a little warm.  When you put melted butter into very cold buttermilk, the butter seizes up and you end up with hunks of cold butter in the middle.

2 cups AP flour
3 tbs sugar
1 1/4 tsp baking powder
1 1/4 tsp baking soda
1 1/4 tsp kosher salt
2 large eggs
1 3/4 cup buttermilk
1/2 cup club soda*
1 tsp vanilla extract
3 tbs melted butter, unsalted

Whisk the dry ingredients in a large bowl
Combine the wet ingredients in a medium bowl and combine with a fork
Add wet ingredients into the dry ingredients and stir to combine


*good thing I have fizzy water on tap!
