Pizza stuffed monkey bread

Be warned, this is not a weeknight kinda dish.  Make the pizza dough one or two nights ahead of time and let it cold rise in the fridge.  No need to put into different bowls, one big one will work.

Take out the dough about an hour before you start making the rolls.  We made plain pepperoni and cheese pizza balls but you can also go all out and make sausage, mushroom and spinach stuffed rolls with a recipe from Use Real Butter.  We used the instructions on baking the pizza rolls from this recipe as well.  We're fans of pizza with the works so we might try a variation of that soon too.  Any way you want to make it, here's what we did.

Melt 4 tbs of butter in a small sauce pan and add 2 cloves of minced garlic.  Cook until just soft and then brush the inside of your bundt pan.
Take your dough and make balls about 2/3 of an ounce and stuff it with your filling, making sure to seal the balls well so the filling doesn't break out when baking.  Brush the balls with the rest of the garlic butter.
When done, cover with a clean towel and let rise for 30 minutes.
Bake at 400 for 35 minutes or until the tops are golden brown.
Turn out the monkey bread on to a plate and serve with pizza sauce for dipping.

For the pizza sauce, melt 1 tbs butter and olive oil in a small sauce pan.  Add 2 cloves of minced garlic and cook until softened but not browned.  Add some pepper flake if you're so inclined.  Add in 2 tbs chopped herbs, we use basil and oregano and stir to combine. Add in 14 ounces of chopped tomatoes and simmer for 15 minutes.  Don't forget to season with salt and pepper (especially if you're using home canned tomatoes).
