One Pot Pasta

This recipe showed up in my Feedly reader about the same time it exploded all over Pinterest.  I think it was MS who did it first but the version from Budget Bytes has spinach and cheese.  Admittedly, we forgot to defrost some feta the night before so we skipped it.  Dinner came together quickly and it was great!

4 c. chicken or vegetable stock
2 tbs olive oil
12 oz fettuccine or linguini, boken in half
8 oz frozen and defrosted spinach
28 oz can of diced tomatoes (ours had basil and oregano in it too)
1 medium onion, chopped
4 cloves garlic, sliced
1/2 tbs dry basil or 1 tbs fresh basil leaves
1/2 tbs dry oregano
1/4 tsp red pepper flakes *optional
black pepper to taste
2 oz feta cheese

Add everything but the cheese to a large pot making sure that everything is submerged.
Put on the lid and turn the heat to high to bring to a rolling boil.
Remove the lid and then turn down to medium, cooking for 10-15 minutes.
Be careful when stirring.  You don't want it to stick to the bottom of the pot but don't over stir either.  It might get mushy.
When the pasta is cooked and almost all the liquid is absorbed, remove from heat and top with feta.

Toddlers loved this and the leftover were good too.  There's a fake Pad Thai version floating around the web that I want to try as well.  Solid recipe though.
